Homemade Soup

A great way to sneak in vegetables for picky eaters.

Method

Make it together.

  1. Chop all your vegetables to roughly the same size.
  2. Heat a dash of olive oil and a knob of butter in a heavy based saucepan.
  3. Add all your vegetables to the pan and saute for 5 minutes.
  4. Cover with a tight fitting lid and let them soften over a low heat for 15 to 20 minutes.
  5. Stir occasionally to ensure they don't stick.
  6. Add 3 low salt stock cubes/pots, and 2 to 3 pints of cold water and bring to the boil.
  7. Turn down heat and simmer until the vegetables are soft.
  8. Add a half pint of milk and bring back to the boil.
  9. Remove from heat and blend with a hand held soup blender.
  10. Serve immediately or keep warm over a low heat.
