Roasted Garlic and Pea Soup

A comforting soup perfect for chilly days, combining roasted garlic and peas.

Method

Make it together.

  1. Preheat the oven to 200u00b0C.
  2. Cut the top off the head of garlic.
  3. Cut out a square of tin foil, large enough to make a baggy parcel around the garlic.
  4. Place the garlic in the middle of the foil and drizzle with olive oil.
  5. Make a loose parcel around the garlic, sealing the edges of the foil.
  6. Roast for about one hour, until soft.
  7. Cook the peas in boiling salted water as usual.
  8. Drain and tip into a food processor or blender, then squeeze in the soft cooked cloves of garlic.
  9. Add the butter, parmesan and half of the stock.
  10. Blend to a creamy puru00e9e.
  11. Pour the mixture into a saucepan and add the remaining stock.
  12. Check the flavour and add cream to taste.
  13. Pour back into a saucepan and reheat gently.
  14. Season to taste with salt and pepper and serve.
